God Cares About the Little Things

This week I wanted to share with everyone how God answered a little prayer - that made a lot of difference!



God has allowed our family the blessing of living with autism. I say blessing, because it is a whole new world filled with wonderful opportunities to share Christ with people we would have never been able to meet if it had not been for autism. I say blessing, also, because it has allowed us to pray more often for wisdom and guidance in a world that we do not understand; but are in awe at the fact that God knows and understands everything. I say blessing, because living with a special needs child opens your heart to see and understand what others often miss.

Because of Zak's autism- I have been faced with a new challenge. Our little Zak is on a gluten (wheat) casein (dairy) free diet. He also has allergies to soy and eggs. Needless to say, I have my work cut out for me. I have found myself researching more, and planning more for his diet than possibly any other challenge I have been faced with before in regards to my children. God has blessed me with a wonderful little boy - that is willing to try and eat what is placed before him. Very seldom does he complain about any food. I know that this is a gift from God!




A few weeks ago, a friend stopped by for a surprise visit and brought a gift along for the children - doughnuts! Now, Zak LOVES doughnuts! I was not sure what I should do and found myself uttering up a desperate prayer to the Lord asking once again for wisdom. I am so thankful that He hears! About as fast as I prayed the Lord gave me an idea. To be honest I knew it was a long shot - but thought I would give it a try. I told Zak that he could not have those doughnuts; but Mommy would make him his own special doughnut. I then got out a rice cake, peanut butter, a banana, and chocolate chips - (gluten free). I made him his doughnut - and sprinkled just a little bit of powdered sugar on the top for looks. He was so excited!! I was so relieved. My older kids helped in asking Zak if they could have a bite of his yummy doughnut. I quickly told them with a smile and a wink that was Zak's doughnut and they would have to be content with the other ones. This sold it for Zak. He was sure that his doughnut was the best. Now he asks for me to make him Zak's doughnuts for snacks quite often. I am so thankful the Lord gave me this idea - just when I needed it.

I followed over here from Kelli's Show and Tell Friday and just kept reading. I know very little about substitutions for special diets but I remembered a great substitution for baking without eggs. I copied and pasted below - hope this helps!

“Eggs” from unflavored gelatin (Knox) Buy in bulk at bulkfoods.com
In all the recipes in this book I have substituted unflavored gelatin for the eggs. The gelatin is less expensive than powdered eggs (as little as 3 cents per “egg”) has an indefinite shelf life and works well in all the recipes I’ve tried. I used unflavored gelatin that was over 20 years old and it worked perfectly.

1tsp gelatin= 1 egg
1 oz gelatin=12 tsp
1 pound gelatin=192 eggs.

Making one egg: Combine 1 teaspoon of unflavored gelatin with 3 Tablespoons of cold water and stir until dissolved. Then add 2 Tablespoons plus 1 teaspoon of hot water and stir. When using your own recipes, decrease the liquid called for in your recipe by about 1/4 cup to compensate for the added water from the “egg.” I have already done this for the recipes in this book.
